What are your top 3 favorite camping/cookout meals?

Camping is one of the greatest joys of our family’s life. There’s something about the simplicity of being outdoors, sitting around a fire, and sharing delicious meals together that brings us closer to each other and to God’s beautiful creation. Over the years, we’ve perfected some go-to meals that are not only satisfying but also easy to prepare while camping. Here are our top three favorites, starting with the most special one of all.

1. Lamb Grilled Over an Open Fire with Kale Salad

Nothing says “camping luxury” like lamb cooked over an open fire. We season the lamb with salt, pepper, garlic, and rosemary and grill it until the outside is beautifully charred and the inside is tender and juicy. The aroma alone is enough to draw everyone to the campfire!

To balance the richness of the lamb, we pair it with a refreshing salad made of lettuce, kale, sunflower seeds, dried cranberries, and a sweet dressing (honey dijon is our favorite). The crunch of the seeds and the sweetness of the cranberries complement the smoky lamb perfectly. This meal feels gourmet, even out in the wilderness, and it’s always a hit with the whole family.

2. Salmon with Asparagus and Corn on the Cob

Our second favorite camping meal is salmon, cooked to perfection on our trusty Blackstone grill. We keep it simple by seasoning the salmon with a mix of lemon, garlic, dill, and olive oil. As it sizzles on the grill, we cook fresh asparagus right alongside it, tossing it lightly with olive oil, salt, and pepper.

To complete the meal, we grill whole ears of corn and if you leave the husks it gives it that smoky flavor. Once the corn is cooked, peel back the husks and add a little butter and a sprinkle of salt. This dish is healthy, flavorful, and so easy to prepare—a true staple of our camping trips.

3. Smashed Burgers with Grilled Onions and Barbecue Chips

For our final favorite, we turn to the ultimate camping comfort food: smashed burgers. We form ground beef into patties, season them with salt and pepper, and press them flat before placing on the Blackstone grill. The sizzling sound as the burgers cook is music to our ears!

We top the burgers with grilled onions, cheese, and a good helping of ketchup before sandwiching them between toasted buns. On the side, we serve classic barbecue chips for that salty crunch. This meal is simple but oh-so-delicious, perfect for nights when we want something quick and satisfying after a day of hiking or exploring.
