What’s the most delicious thing you’ve ever eaten?

There was a time when the most delicious thing I had ever eaten was something smothered, cheesy, buttery, or fried. You know, the kind of meal that made you close your eyes and hum a little “mmm” without shame. I used to rank deliciousness based on richness—how much sauce it had, how sweet it was, how much it stuck to your ribs. But lately, something unexpected has happened.

I’m reevaluating what delicious really means.

As my taste buds have evolved, so has my understanding of nourishment. I’ve started leaning into foods that aren’t just flavorful but alive—vibrant fruits, crunchy vegetables, and wholesome meals made with ingredients that come straight from the earth. Foods that not only taste good but make me feel good after I eat them. No bloating. No guilt. Just clean, satisfying energy.

I’m learning to appreciate the natural sweetness of a perfectly ripe peach or the zing of fresh-squeezed lemon over steamed greens. And the kicker? These foods don’t have to be boring. With the right seasoning or naturally made dressings, they can tickle my taste buds in ways I never expected.

What I love most is that these meals aren’t just for the kitchen—they’re perfect for taking on the road, especially when we’re out camping in nature. Whether we’re cooking over a small camp stove, a fire pit, or preparing meals ahead of time to enjoy by the lake or under the trees, clean eating has found its place in our outdoor adventures.

🥗 Rainbow Chickpea Salad
A mix of diced cucumber, cherry tomatoes, red onion, bell peppers, and chickpeas tossed in olive oil, fresh lemon juice, a sprinkle of sea salt, black pepper, and a dash of cumin. Easy to prep at home and serve cold at the campsite—no reheating required!

🍠 Roasted Sweet Potatoes with Avocado Herb Drizzle
Slice and roast the sweet potatoes before the trip or over the fire in foil packets. Add a homemade drizzle of mashed avocado, lime juice, fresh cilantro, and a tiny splash of maple syrup right before serving. It’s sweet, savory, and satisfying while watching the fire crackle.

🥬 Stuffed Collard Wraps
Use large collard leaves to wrap up a mix of cooked quinoa, shredded carrots, red cabbage, avocado, and tahini-lemon dressing. These wraps travel well and are fun to eat by hand while lounging at the campsite.

🍓 Fruit & Nut Power Bowl
Pack your favorite fruits—bananas, strawberries, blueberries—and pair them with a scoop of Greek or coconut yogurt. Add raw almonds, chia seeds, and a drizzle of raw honey. This is a refreshing and energizing breakfast while watching the sunrise in the wild.


I won’t pretend I don’t still think about that over-the-top casserole or extra cheesy plate of pasta every now and then, but I’m learning that delicious doesn’t have to mean heavy or processed. It can mean fresh, clean, and nourishing. And what’s more, these meals make the camping experience even better—because nothing pairs with nature like natural food.
