What’s your go-to comfort food?

If you had asked me a year ago what my comfort food was, I would’ve said pizza without a second thought. That warm, cheesy slice used to hit the spot every time — whether it was a movie night, a tough day, or just because. But something shifted, and now, my go-to comfort food is something a little messier, a lot cheesier, and totally nostalgic: ground beef Rotel tomato cheese dip with tortilla chips.

Y’all, this dip is more than food — it’s a cozy memory in a bowl.

It starts with a simple skillet of browned ground beef — seasoned just right. Then in goes a block of Velveeta cheese and a can of Rotel tomatoes with green chilies. As it melts together, the magic happens. That creamy, spicy (mild), beefy mixture becomes the kind of dip that just calls for a tortilla chip — or three — and a moment to yourself. It’s warm, it’s gooey, it’s got a little kick, and it’s perfect for scooping up until you can’t eat another bite.

But what makes it even more special is where we enjoy it.

This dip isn’t just made in the kitchen anymore — it’s made by the campfire, during those peaceful spring or fall camping trips that we love so much. There’s just something about sitting outside, feeling that crisp breeze, hearing the gentle rustle of the leaves, and gazing at a lazy river winding through the trees. Nature is all around, and there’s no rush. Just us, a warm bowl of dip, and a moment that feels like it was made to be savored.

Whether we cook it over a camp stove or melt everything down in a cast iron skillet right over the fire, it becomes part of the experience. It’s comfort food that doesn’t just fill the belly — it fills the soul.

Pizza still has its place, sure. But this dip? It’s taken the crown. Because comfort, for me, now looks like sitting outdoors with the one I love, breathing in fresh air, and dipping into something delicious while being surrounded by God’s creation.

Cheesy dip by the river? Now that’s my happy place.
